France Process can provide support for specific parts of the cheesemaking process or for an entire turnkey project installation for cheese production: from milk reception, pasteurisation, processing, cheese vats for soft and hard cheeses, mozzarella, whey processing, cheese moulds, washing tunnels, salting machines, piercing machines, maturation and affinage, climate control, cutting, wrapping and packing.

CHEESE VATS

Where your cheese is born

The heart of every fromagerie: having the correct vat for the type of cheese you make, is critical to the efficiency of your cheesemaking. France Process Manufacturing designs and builds cheese vats for all types of cheesemaking.

We can supply:

  • Copper vats for hard or alpine style cheeses, round or Double-0 format from 1,000 - 6,000L

  • Stainless steel semi-cylindrical open vats for white rind soft cheeses from 1,200 - 2,500L

  • Stainless steel closed vats for semi-hard or hard cheeses.  Fully automatic with CIP system from 3,000 - 20,000L

CHEESE MATURATION AND AGEING

The Forgotten Part of Cheesemaking

The maturation of cheese requires specific, accurate and precise conditions to ensure that the promise of the milk's quality and the cheesemaker's skill is carried through to the finished cheese.  France Process is partnered with Air Quality Process, the manufacturer of the most highly regarded cheese ageing, climate control, and conditioning systems in the industry.  

As a dramatic improvement over conventional gravity cooling or HVAC systems, the AQP technology uses innovative hollow-tube heat exchangers to ensure precise temperature and humidity control, maximising cheese quality and minimising yield loss from undesirable drying.  Cheesemakers all over the world are finding that an investment in AQP systems will pay for itself many times over in reduced weight loss, increased maturation consistency and improved flavour and shelf life. An AQP system will be designed specifically to fit your ageing rooms and ensure homogenous conditions throughout, ensuring consistent maturation on every shelf, at every stack and in every corner.  Combined with a design that enables easy cleaning and the highest possible levels of hygiene, AQP technology is a game-changer for many cheesemakers at all scales.

ULTRASONIC CHEESE  CUTTING AND PACKAGING

Precision and Quality

Our chosen partner, BFR Systems (www.bfrsystems.com), specialises in the production of ultrasonic cutting machines and complete systems for portioning hard and soft cheeses under the Erma brand. The equipment weighs each cheese, sensing its dimensions and then cuts to your specified portion size. Our equipment ensures 99% accuracy in fixed-weight cheese portions and is capable of slicing all cheese types to specific weights.  The ultrasonic technology enables precise, smooth, and clean cutting of even soft and sticky cheeses prone to fracturing. Additionally, we provide a variety of thermoforming and flow pack packaging machines to complement the cutting line.

CHEESE WRAPPING MACHINES

Speed and Efficiency

Hand wrapping of soft cheeses is time consuming and labour intensive.  Our partner Biomeca Emballages produces specialised machines that mimic hand-wrapping in paper or foil, to create the perfect finished product in a fraction of the time.  Biomeca machines can be custom built for your specific needs, to fit your production building and to give the best result for your cheese.  Biomeca can print and apply labels with weight, batch code and use-by dates, and handle thousands of cheeses per hour.  Machines can be paired with conveyors and box loaders and will revolutionise the productivity of your packing room.

CHEESE MOULDS AND FORMS

Drainange Efficiency

France Process are an international distributor of plastic cheese moulds produced by Medicos Food, a world leader in the custom design and injection moulding of food grade, soft-cheese moulds.  Medicos supply a huge range individual shaped moulds for fresh and lactic cheeses but specialise in textured and non-textured block moulds with and without bases, interlocking designs that allow for efficient  stacking and turning of stacks without the need for heavy, bulky draining trays. 

Medicos supply forms for a wide range of traditional cheese shapes, but can tailor make designs to your own requirements

CHEESE FLOW PACKING

Packing Efficiency

For packaging of hard cheeses and cheese portions, our partner, Omori produces fast, efficient and precise flow-wrapping machines that can revolutionise the shelf-life and quality of your packed cheeses.  Available for use with ambient or modified atmosphere, the Omori machines can be customised to fit your process, your cheese and your building.  Machines can be configured to receive product direct from your cutting machines and deliver packed products to whatever box packing is required.
